Cashew nuts (Anacardium occidentale) are highly valued for their high-quality proteins and lipids. This study evaluates their fatty acid distribution and amino acid concentrations.
Lipid Characterization
Analysis shows that unsaturated fatty acids make up over 79% of the total lipid content, primarily Oleic acid (18:1) and Linoleic acid (18:2). This composition helps support healthy cholesterol levels.
